Enchilada Recipes - Real New Mexico Dishes

If you're anything like me, you're always on the lookout for good enchilada recipes. This versatile dish just seems to say "Mexican food," perhaps more than any other, and the Mexican food lovers I meet all seem to have their personal favorites.

Just think about it: There are chicken enchilada recipes, as well as ones that include beef, pork, shrimp and other seafood. There are ones with no meat at all, but which still include one or more of various cheeses. There are enchilada recipes for vegetarians which forgo the meat - and even the cheese - altogether, although admittedly, these wouldn't be included among my all-time favorites. For me, a "real" plate of enchiladas simply has to have at least a generous serving of cheese - with all respect to you vegetarians out there.

And then there's all the other possible fillings and toppings: red, green, and yes, cream sauces, and the many possible combinations and/or variations on those (can you say chicken enchiladas suizas?) There's sour cream, and ripe (black) olives, cilantro and avocado - I don't know about you, but I'm getting mucha hambre right about now, and we're only getting started!

Anyway, I think you're beginning to see that if you're looking for great enchilada recipes, you've come to the right place. However, I'll admit it right up front: I'm a bit of a Mexican food snob! I grew up in Las Cruces, New Mexico, and consider it (along with many friends and family members) the Mexican food capital of the world. As far as I'm concerned - and I've eaten "Southwestern"/Mexican food in many parts of the world - there's little, if any truly authentic Mexican food elsewhere.

But I suspect I'll hear some disagreement on this. Don't worry - you now have your chance to voice your opinions and comments, and even post your own enchilada recipes. My blog is now up, and you can link to it (below) from this article! Together, we'll have some fun, share some great recipes, and hopefully discover some great Mexican food together.

By the way, here's a cookbook with some great enchilada recipes, and quite a few other very good Mexican food recipes. I've yet to try them all and obviously, there's a lot more here than just enchiladas, but it looks like a winner to me so far.
